the PROLOGUE

FROM PIZZA TO FINE DINE

For years, the story of Stout's was pizza. It was in our name and on our menus. Tossed across Stout’s Pizza Co’s three storefronts and served fresh from its food truck.

Six years later, we decided to step out of our kitchen’s comfort zone and chase new tastes. Out of the oven came Stout’s Signature at Grape Creek Vineyards—a fine-dining destination in the heart of Texas Wine Country.

Now, we’re excited to be writing our next chapter in the heart of downtown San Antonio.



the SETTING

The Tobin Center was born from the idea that San Antonio needed a world-class performing arts facility. Despite the existence of the Majestic Theater and the now recently renovated Lila Cockrell Theater, a new state-of-the-art center was desired. And so in 2008 the question was put to the voters of Bexar County who approved a $100 million bond to fund construction of the facility.

Performance halls have historically been hermetically sealed boxes where the wealthy aristocracy goes to entertain themselves without interacting much with the city around them. The Tobin Center’s location gives it a unique potential to interact with the River Walk and by extension, the rest of San Antonio.

THE MAN BEHIND THE MENU

When it comes to pizza, Jason Stout believes in cutting only fresh, quality ingredients—not corners.

It’s a standard baked into every order since the very first Stout’s Pizza Co. opened its stone oven doors in 2011. With a family-like culture in the kitchen and an extensive menu of made-to-order gourmet pies, Stout’s quickly became a destination for San Antonio foodies seeking a slice of something better.









Opened in 2015 in the heart of Texas Wine Country, Stout's Trattoria at Grape Creek Vineyards offered pairings beyond pizza with an expanded menu from filet to risotto and even its namesake’s signature bottle of wine, Stout’s Sangiovese 2014.

Eight years, one food truck, and thousands of patrons later, Jason Stout now brings his fine-dining pizzeria concept back home to San Antonio’s renowned Tobin Center.

On top of his celebrated selection of entrees, this concept will include a full bar featuring signature cocktails with whiskey and scotch lockers all against a backdrop of upscale, performance-driven design.

And of course, his handmade pizza is here, too. Because it just wouldn't be Stout's without it.
